I originally made something like this from a recipe online. Last night, I threw this together. It's much simpler than the original, and I think just as good. - Italian sausage (about a pound)
- 2 fennel bulbs, sliced
- 2 medium onions, sliced
- 3 cups of chicken broth
- garlic (I used about 1 tsp of granulated)
Brown the sausage. I can't generally find bulk Italian sausage, so I just cut open the casings.
When the sausage is cooked, add the rest of the ingredients. I only use the bulb section of the fennel (that looks kind of celery or onion like)
Bring to a boil, then lower the heat and simmer for about an hour.
I usually use sweet sausage, but this time there was a package of hot sausage marked down. it wasn't that hot on it own, but WOWZERS did it make the soup spicy... but it was still really good.

I can't buy fennel here, but I bought seeds to grow some this summer. I'll have to try this soup then.

I've never been able to grow it successfully. I got some in Misfits Market a couple times, which is why I first sought out a recipe. Sometimes Traer Joe's has it here, but it's not consistent.

I grew it here a few years ago. It went crazy. I ended up with so much that I was giving it to anyone who would take it. I haven't grown it since, but I ordered some seeds for it this year.
