this is the chili I make for the Wonderful Wednesday ( we serve lunch to raise funds for the food bank ) I usually make 4 very large pots of this
1/4 cup vegetable oil 1/2 large onion, diced 1/2 bell pepper, diced 1/2 teaspoon minced garlic 1 lb. ground chuck 1 Tablespoon worcestershire sauce 2 cans red kidney beans 1 can black beans 1 can whole tomatoes, smashed and chopped 1 can tomato paste 4 tomato paste cans of water 3 Tablespoons chili powder 1 Tablespoon black pepper 1 to 1 1/2 teaspoons salt 1/2 teaspoon cumin 1/4 teaspoon oregano 1/8 teaspoon cayenne pepper (more if you prefer) 1 large dollop molasses or 1 Tablespoon sugar ( this makes the chili )
In a 4-quart pot, heat oil, add first 3 ingredients, cook several minutes and add beef, brown until evenly gray in color. Add worcestershire, cook another minute and add spices. Stir. Add beans, tomatoes, paste and water. Stir mixture and add molasses. Stir, bring to a slight boil. Cut down to simmer, cover and stir occasionally for at least and hour and a half.
