Slow Cooker Chicken Taco Stew contributed by gayla
-------------------------------------------------------------------------------- 1 onion, chopped 1 16-oz can black beans 1 16-oz can kidney beans 1 16-oz can corn (drained) 1 8-oz can tomato sauce 2 14.5-oz cans diced tomatoes w/chilies (If it is too spicy for you, substitute a can of diced tomatoes for one of the diced tomatoes w/chilies.) 1 1.25-oz packet taco seasoning 1-2 boneless skinless chicken breasts
Mix everything together in a slow cooker except chicken. Lay chicken on top and cover. Cook on low for 6-8 hours or on high for 3-4 hours. 30 minutes before serving, remove chicken and shred. Return chicken to slow cooker and stir in.

I make this only I don't put in the tomato sauce and add a package of taco seasoningl then about 5 or 10 minutes before it's finished cooking I add a package of dried ranch dressing.

I made Chicken Taco Soup (or stew) the other day... it is sooo yum. Almost better than regular Taco soup... but only almost.

I made a sorta Taco stew yesterday. I used some canned beef that didn't process long enough, a large can of tomatoes, canned potatoes, 2 cans of Rotel tomatoes an extra large can of black beans, 2 small cans of corn. Seasoning was a package of taco seasoning and package of ranch dressing mix.
Now I'm going to have to freeze a bunch of it because it made a big pot full.

This sounds like something that Timmy made not long ago. He put salsa(made his own) instead of diced tomatoes and taco seasoning. It was thick enough that we served it over rice instead of as a soup. Yum, it sure was good.
