Quick Bean Soup contributed by carla
-------------------------------------------------------------------------------- 1 c. finely chopped ham 1/4 c. chopped onion 1/4 c. chopped bell pepper 2 T. bacon drippings 1 (1 lb.) can tomatoes, cut up 1/2 c. water 1 T. brown sugar 1 T. vinegar 1/2 t. salt 1 (1 lb. 6 oz.) jar New England-style baked beans**
** I use Bush's Original beans.
Cook ham, onion and bell pepper in bacon drippings in large saucepan until meat s browned and vegetables are soft. Add tomatoes, water, brown sugar, vinegar and salt; cover and simmer 10 minutes.
Reserve 1 c. beans from jar. Mash the remainder. Add reserved and mashed beans to soup. Heat thoroughly, stirring occasionally.
Makes about 5 cups.
