Cheesy Ham-Potato Soup contributed by carla
1/4 c. diced onion 1/4 c. diced carrots 1/4 c. diced celery 4 large potatoes, diced 3 T. butter 1/2 c. diced ham 2 T. cornstarch 4 c. milk 3/4 c. cheese
Place all vegetables in a large saucepan. Add small amount of water, butter and ham, and cook until tender. Mix cornstarch with small amount of milk and shake. Add cornstarch mixture, remaining milk and cheese to vegetables. Cook slowly and stir often until hot.
I double this recipe for my family of 5.
