This is one of my grandmother's Depression-era recipes.
Simple Bean Soup
1# great northern beans, washed and sorted 1 yellow onion, diced ketchup 1 large carrot, scraped and grated ham bone
Set your beans to soak overnight. Around lunchtime next day, drain and rinse well. Put into soup pot, covered in fresh water. Simmer for thirty minutes; drain and rinse. Pour beans back into the pot, cover with water. Add onion and the ham bone. Simmer for three hours. Remove bone. Add grated carrot, salt and pepper to taste and a tablespoon or two of ketchup. The carrot and ketchup is what makes the bean soup tan in color; I don't know why either, it just does. Simmer for thirty minutes to an hour and serve.
