Skillet Chicken Stew contributed by chilipalmer
8 chicken pieces 1/2 tsp olive oil 2 c. water 2 cans condensed cream soup 6 medium potatoes, peeled and diced 1 yellow onion, diced fine 2 large carrots, scraped and sliced 2 stalks celery, sliced 2-3 garlic cloves, peeled 1 tsp Italian herbs 1 pkg dry onion soup mix
In a very big skillet (BIG skillet) brown chicken well in oil. Remove from pan and set aside. In the skillet, mix together water, soups, herbs, dry onion soup mix and vegetables. Add the chicken back to the skillet. Cover and simmer, stirring occasionally, for 30-40 minutes or until chicken and vegetables are tender. Add more water as necessary.
