I could live on this!
6 c. water 1/2 c. heavy whipping cream 1-1/2 c. instant polenta 3/4 stick unsalted butter, in pieces 1/2 c. freshly grated Parmesan cheese 1/4 c. finely chopped Italian flat-leaf parsley salt, to taste
Combine the water and cream in a medium saucepan and bring to a boil over high heat. Reduce the heat to medium and slowly pour in the polenta, stirring constantly. Reduce the heat to low and continue stirring until the mixture is thickened and smooth, about 15 minutes. Remove from the heat and stir in the butter, cheese, parsley, and salt until thoroughly blended. Serve immediately.
Serves 4 to 6.
