Onion Rings contributed by chilipalmer
3 c. flour 1 tbsp baking powder 2 tsp salt 2 tsp chili powder beer or water
Mix together first four ingredients. Whisk in liquid until batter is a creamy consistency. Peel and slice an onion, separate slices into rings. Heat oil in a deep skillet to 350 degrees. Dunk onions into batter until thoroughly coated, drop one by one into hot oil. Not too many at one time or the oil will cool and your rings will be greasy. Fry, flipping once, until golden brown. Remove with fork or slotted spoon to paper towel-lined platter; salt to taste while still piping hot. Continue until the whole onion has been fried. (YUM.)
