Italian Egg Biscuits
In a mixing bowl combine: 3 eggs 1/2 c. oil 1/2 c. sugar 1/2 c. milk 1 t. vanilla Mix well. In another mixing bowl mix: 3 1/2-4 c. flour (I used 3 3/4 cups of bread flour) 4 t. baking powder
Mix well and add to above. Mix and knead a bit to incorporate everything together well. Then pinch off golf ball sized balls and roll into about an 8 inch long thin piece, then fold the piece in half over your finger and twist the remaining together to form a sort of spiral shape. Once the dough is all finished this way, brush each with a beaten egg. Bake at 400 degrees for 15-20 minutes.
Italian Pepper Biscuits
4 c. flour 1 T. baking powder 1 T. coarse pepper Mix in a bowl and make a well.
1 egg 3/4 c. corn oil 1/2 c. milk 1/2 c. hot water 1/2 t. salt
Mix in a bowl and pour into the well. Mix and knead well. (You may need to sprinkle a little more water to get it to hold together well.)
Take a small handful and roll into a log. Twist the log and form into a wreath shape. Pinch the ends together and lay on a greased cookie sheet. Finish the rest and then brush with an egg yolk wash. (Just a little water mixed with an egg yolk.) Bake at 375 for 20-25 minutes.
