Sweet Cheese Dumplings contributed by gayla
1 cup heavy cream or half & half 2 cups ricotta cheese 3 eggs, separated 1 Tablespoon unsalted butter 1/3 cup semolina 1-2 Tablespoons AP flour 10x sugar for garnish
Cream the butter and egg yolks. Stir in semolina, ricotta and cream. Mix well, cover and let stand for 45 minutes. Whisk egg whites until peaks form. Carefully fold in the egg whites into the ricotta cheese mix, with the flour. Into a pot of salted boiling water, scoop a spoonful of the mixture the size of a golfball and drop into the water for 6-7 minutes. Spoon out and drain. Serve warm with confectioners sugar sprinkled on top.
