Quick and Easy Baked Custard contributed by riverwalk
1-3/4 cup milk 3 eggs 1/4 cup sugar 1/8 tsp. salt 1/2 tsp. vanilla extract
Pour milk into glass measure; heat, uncovered, in microwave for 2 minutes. Beat eggs with sugar, salt and vanilla; add scalded milk slowly, stirring constantly. Pour into 4 custard cups. Cook, uncovered, for 4 to 4-1/2 minutes or until just set when shook; stir each cup 4 times during cooking and reposition cups for more even cooking.
Cool, then chill, uncovered, for 1 hour. Cover and chill if stored longer.
May be garnished with dash of ground nutmeg or cinnamon, sprinkling of toasted coconut, sliced sweetened strawberries or raspberries, sliced peaches, banana slices rolled in orange juice and chopped nuts or whipped cream.
