Stuffed Green Peppers contributed by riverwalk
4 green peppers 1 lb. ground beef 2 cups cooked rice 1/4 cup chopped onion 1-1/2 tsp. salt 1/8 tsp. pepper 2 8-oz. cans tomato sauce
Cut peppers in half lengthwise; remove seeds and wash. Combine beef, rice, onion, salt, pepper and 1/2 can tomato sauce. Pile mixture into peppers in large baking dish. Pour tomato sauce over each pepper. Cover tightly and bake at 350 degrees for 1 hour and 15 minutes or until peppers are tender, basting occasionally.
