Spicy Beef Curry contributed by riverwalk
Cooking spray 11/2 tablespoon peanut or soy oil ½ cup flour 1 ½ pounds lean beef, cubed 1 large onion, chopped 2 teaspoons sugar 1 cup beef broth 4 tablespoons lemon juice, preferably fresh 3 tablespoons grated or flaked coconut 1 large potato, peeled and chopped 1 large tomato, peeled and chopped 5 tablespoons seedless raisins 1/2 teaspoon dry mustard 4 tablespoons curry powder* Dash of nutmeg salt to taste
Directions:
Lightly spray slow cooker with cooking spray.
Dredge meat in flour and brown on all sides in hot oil. Set aside.
Add onions to skillet, sauté a few minutes but do not brown.
Transfer the onion to the slow cooker.
Layer with the browned beef.
Cook the rest of the ingredients in the skillet for 2 minutes.
Transfer the skillet mixture into the slow cooker.
Cover, and cook 7 hours on LOW.
Add mustard, curry powder and nutmeg, and cook for an additional 1 hour.
Add salt to taste before serving.
