Rice Pudding contributed by riverwalk
Cooking Spray 1 C. raw white arborio rice 4 C. half and half 1 (14-oz.) sweetened condensed milk 1 teaspoon vanilla extract ½ cup raisins
Directions:
Lightly spray slow cooker with cooking spray.
Place the rice in the insert of the slow cooker.
Combine half and half and sweetened condensed milk in a large, heavy saucepan.
Stir together to mix well.
Heat the mixture until it almost simmers, stirring frequently; about 10 minutes.
Pour the mixture over the rice, stir well and cover and cook on LOW for 3 hours.
Stir in raisins and vanilla extract
Cook for an additional 2 hours. Turn off cooker and let pudding sit, covered, for 30 minutes.
