Cheeseburger Muffins
1/2 pound ground beef 1 small onion, finely chopped 2-1/2 cups flour 1 tablespoon sugar 2 teaspoons baking powder 1 teaspoon salt 3/4 cup ketchup 3/4 cup milk 1/2 cup butter, melted 2 eggs 1 teaspoon mustard 2 cups shredded cheddar cheese
In large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
In a bowl combine flour, sugar, baking powder, and salt.
In another bowl combine ketchup, milk, butter, eggs, and mustard. Stir into dry ingredients just until moistened. Fold in beef and cheese.
Fill greased muffin cups 3/4's full. Bake at 425.
For mini cups; bake 15-18 minutes or until toothpick comes out clean. Will yield approx. 5 dozen
For regular size: bake 20-25 minutes. Will yield around 2 dozen.
