After the thing is skinned and cleaned, soak it overnight in salt water. (In the refrigerator) Then put it in the crockpot (you can cut it up, if you need to) till it's falling-off-the-bone-tender. Let it cool a while, then pull all the meat off the bones. Now, put it in another pan and pour barbecue sauce all over it and throw it in a 350° oven for about an hour. That's all there is to it. You can do it over 2 days, if you'd prefer - slow cook it one day and oven roast it the next.
