Bean Patties
- 1 can cooked beans (I used Pinto, but you can use whatever kind you like or have onhand) - choice of flavorings (chopped jalapenos, minced onion, minced garlic, chopped sweet or roasted peppers, etc) - about 1 cup of all-purpose flour - salt - pepper - grease for frying (bacon grease, shortening, lard, butter, oil, margarine, etc)
Mix flour with salt and pepper in a small bowl or on a plate. Empty beans into another bowl. Add flavorings and about half the flour mixture to make a stiff 'dough', adding more flour, if needed. Shape bean mixture into patties (I used a heaping tablespoonful of the mixture). Roll patties in flour mixture and fry in hot grease till golden brown and crispy. Serve hot. Makes about 8 patties.
I think these would be good with cheese grits and cole slaw.

I made these several times .. Grands love them with pintos , I made them recently with black beans they were delicous .
