My sister came up with this recipe. I tried it today and we loved it.
Quinoa Salad
1 cup quinoa, prepared according to package directions and cooled 1 small onion, diced 1 small bell pepper (or half a big one), diced 1/2 t. minced garlic 4 or 5 celery stalks, sliced mayonnaise salt pepper
In large bowl, mix quinoa, onion, bell pepper, garlic, and celery. Stir in enough mayonnaise to moisten. Salt and pepper to taste.
note: Other vegetables can be added, as desired.
