Grits made with nothing but water are not really good grits. You have to try them like this before you insist you hate grits.
This makes about 2 cups. Double or triple as needed
1 1/2 cups water 1 cup milk 1 Tablespoon butter 1 teaspoon salt 1/4 teaspoon pepper 3 or 4 shakes of hot sauce (like Texas Pete) 1/2 cup of grits (not instant; quick is fine, though)
In a medium saucepan, combine everything except the grits. Over med-high heat, bring just to a boil. BUT, while you're waiting, once the butter is melted, give it a good stir and then taste it. Make sure it has enough salt and pepper at this point, because this is the flavor that will be inside your grits. No flavor here, none later. Because there is milk in this, don't leave it for very long or it will boil over. Once it just starts to boil, add the grits a little bit at a time, stirring constantly so you don't get lumps. Turn the heat to low, and cook uncovered until thick and creamy. Be sure to stir every few minutes so they don't stick and scorch. If you want to throw cheese in when they're almost done, you can do that too.

That's how I make mine and, you're right, they're really good. I try to make a lot more than we'll need. I put the leftovers into a greased loaf pan and refrigerate. The next morning, I remove it from the loaf pan, slice, roll in flour, and fry till golden brown and delicious. Serve hot with syrup.

make mine the same way but have to make two pans one with hot sauce and one not .
ever make them with cheese ?

LOL I'm two people on a couple of forums. It has one advantage - if I forget one password, I can usually remember the other one.
I put cheese in mine sometimes. Sometimes I just stir it in before serving, sometimes I stir in part of it, put the grits in a greased pan, put the rest of the cheese on top, and bake it till the cheese browns a bit.
