Roast Beef and Onion Soup
This recipe is a twofer (twofer the price of one) I was wanting onion soup the other day, but didn't have any beef broth. I decided to make a beef roast instead, then thought about how wonderful the gravy is when I pressure cook it. That's when the little light went on and I came up with this recipe.
You'll need:
1 beef roast (2-4 lbs) 4 - 5 cups of julienned onions 3 cups water beef bouillon granules pepper cooking oil (I use either canola or corn oil) good bread, sliced and toasted white cheese, shredded (gruyere, swiss, or mozzarella)
Pour enough cooking oil in the pressure cooker to almost cover bottom. Turn heat to medium and heat oil for a minute or two. Add onions and cook until onions are light brown, stirring frequently. This will take about half an hour.
Once onions are golden brown, place raw roast on top of them, pour water over all, adjust cover on cooker and pressure cook for 1 hour.
Cool pressure cooker (either by running cold water over it or just let it cool naturally, about 20 minutes) Remove roast. That's your meat for one meal.
Next, taste broth and add pepper and bouillon to taste. If you prefer, you can use salt instead of bouillon. This is your onion soup.
Ladle soup into oven-proof bowls, float toast on top, top with cheese and broil for a minute or so, until cheese is melted.

I forgot I was goin to make this. I'm goin to rummage around in the freezer in the morning and we'll have this for supper.

My daughter made this the other day. She called me after she took the meat out and asked what else she was supposed to put in the soup. I told her 'pepper'. She couldn't believe that was all she needed to add, so I told her to taste it. She said it was delicious. I said, "Isn't that the easiest soup you ever made?" and she said that it was.
Can you tell I really like this recipe? I've made it several times and it's always a hit.
