For a while, nuts were very expensive here, so I starting making a simple English Toffee, then freezing and crushing it to use in place of nuts in baked goods. It works very well, especially in cookies and cakes.
English Toffee
3/4 cup packed brown sugar 1/2 cup butter or margarine (1 stick)
Thoroughly grease bottom of cookie sheet.
Place sugar and butter in a heavy medium saucepan. Heat to boiling, stirring constantly. Boil over medium heat while stirring constantly for 7 minutes.
Immediately pour and spread mixture evenly in pan.
Chill until firm, then freeze. Once frozen, smash into chopped-nut-size bits. (I use a hammer)
Use in most any baked goods recipe that calls for nuts.

Awesome and you can even sprinkle some chocolate chips on top let them melt spread then freeze and break.
