Quick Chinese Takeout
2 packages of prepackaged Ramen noodles - chicken or shrimp flavor but other flavors would do too! (I used Oriental)
3 cups water
leftover chicken breast, cut up in thin slices or cubes
shrimp, if desired (raw or cooked - see notes in recipe)
1 cup shredded cabbage (or from bagged coleslaw package)
3 Tbsp. soy sauce, optional
1 1/2 t. cornstarch
Cook ramen noodles (including the spice packets) in 3 cups water.
Add cabbage and chicken. Add shrimp (if raw). Cook 4 minutes.
Stir in shrimp to heat (if precooked)
Mix cornstarch with soy sauce. Add to mixture and continue cooking for another minute.
Serve with hot tea!
note: I think there are a lot of other things you could add to this, if you wanted to, like mushrooms, celery, shredded carrots, bean sprouts, etc.
Other leftover meats would work, too.
