Peggy's Chicken Enchiladas Recipe courtesy of meemo
1 can cream of chicken soup 1/2 cup sour cream 2 tsp chili powder 2 cups cooked chicken 1/2 cup shredded cheese 1 cup Picante sauce 6 flour tortillas
Spray a baking pan. Mix the soup, s.cream, chili powder and Picante sauce. Take out 1 cup and mix with the chicken and cheese. Divide the chicken mix out on the tortillas. Roll them up and put in the baking dish and spoon the rest of the sauce over them. Cover and bake 350 for 40 min or until the stuff bubbles.
Now, I had leftover chicken and yellow rice so that's what we had with it. I think its too much meat. The next time I'm goin to use half the meat and half rice. I'm also goin to cut down the middle before putting the sauce on top. I don't always have sour cream so some time I'll try it with mayo and see if it comes out the same.
