Bistro Biscotti
1/2 cup butter, softened 1 1/2 cups sugar 3 eggs 2 T. vanilla extract 1 T. almond extract 3 cups all-purpose flour 1 1/2 t. baking powder 1 cup whole almonds, toasted (I use either slivered or sliced, instead and I don't toast them)
Combine butter and sugar; stir until well blended. Add eggs, vanilla, and almond extract; blend well. Stir in flour and baking powder; mix well. Stir in almonds.
Divide dough into fourths. Shape each fourth into a 12" log. Place logs 2" apart on greased cookie sheets. Press tops of rolls to flatten slightly.
Bake at 325 deg. for 25 minutes or until lightly browned. Remove from oven.
Using a sharp knife (I use serrated), slice rolls diagonally into 3/4" slices. Place slices, cut side down, on cookie sheets. Return to oven and bake an additional 15 minutes or until lightly browned. Cool on wire rack. Store in airtight container.
Makes about 5 dozen cookies.
note: You can use other nuts and flavorings in this recipe. (Anise flavoring is nice for a change) You can even omit the nuts, if you'd like.
You can dip one end of these cookies in melted chocolate, if desired.

I'm fixin to head to the kitchen to make paul an apple pie and me some biscotti. I love the stuff but cant find it anywhere that it isnt dipped in chocolate. I DO NOT LIKE CHOC> Thanks for posting this.

I've never put the chocolate on it. I just added that to aggravate you (LOL just kidding)
