Fruit Cocktail Bread Pudding
10 slices of bread 1 cup of sugar 2 eggs 1 tsp. vanilla 1 tsp. cinnamon 1 (15 oz) can of fruit cocktail, undrained 1 (12 oz) can evaporated milk 1/4 cup (1/2 stick) butter
Preheat oven to 350 degrees.
Melt 1/2 stick of butter in 9x9 inch pan.
In a bowl break the bread into bite-size pieces.
In a separate large bowl add the sugar, eggs, vanilla, and cinnamon. Whisk until well blended.
Stir in the evaporated milk. Stir in the fruit cocktail.
Pour bread into the liquid mixture. Stir until all bread pieces are well-moistened. Pour mixture into the 9x9 pan.
Put in the oven and bake for 45 minutes to an hour. It is ready when it's golden brown and an inserted knife comes out clean.
Serve warm or at room temperature. I served mine with Almond Butter Sauce. (recipe below) Most recipes say to serve it with Whiskey Sauce.
Almond Butter Sauce
1 cup sugar 1 cup water 1/4 t. cream of tartar (helps keep it from crystallizing) 1 t. almond extract 1/2 t. butter flavoring
In small saucepan, bring sugar, water, and cream of tartar to a boil, stirring occasionally. Remove from heat and stir in flavorings. Serve warm.
