This was Pauls familys favorite cake icing. They always had it on a yellow cake. Fudge Icing 2 cups granulated sugar 1/2 cup cocoa 1 stick of marg. or butter 1/4 cup of milk (2% or skim works too) 1 Tablespoon vanilla Mix all the ingredients in a sauce pan except the vanilla. Bring to a boil stirring constantly. A full rolling boil. Let it boil 1 minute. Take it off the stove and add the vanilla. Beat it with a mixer until its creamy. Pour over the cake and let it cool. To be honest.... It sometimes wont set up and kinda runs under the cake but no matter how it turns out I never have any left:) Yall enjoy oh yeah it covers a 9/13 cake. If it looks like it will be a little thick you may be "forced" to pour a little on a plate to cool like fudge

Thank you, Peggy! I could easily trade out the cocoa for carob in this, so I could eat it, too. Yummy!
