1-1/2 c. whole wheat flour 3/4 c. unbleached flour 1/2 c. rolled oats 1/2 c. sugar 2 T. cracked wheat 1-1/2 t. baking powder 1/2 t. baking soda 1/4 t. salt 1 to 1-1/4 c. milk 1 T. oil 2 egg whites
Preheat the oven to 350F. Lightly coat an 8-1/2" x 4-1/2" loaf pan with nonstick spray.
In a large bowl, combine the whole wheat flour, unbleached flour, oats, sugar, cracked wheat, baking powder, baking soda and salt.
In a medium bowl, whisk together the milk, oil and egg whites.
Make a well in the center of the flour mixture and pour in the milk mixture. Stir until the dry ingredients are just moistened.
Pour the batter into the prepared pan and bake for 45 minutes. Remove bread from pan and let cool on a rack.
