When I went to the store last week they only had 10# bags of onions so I intend to cut up half or so. I'm thinking I'll freexe half and dry the other half of what I cut up.

A friend gave me a whole bunch of onions from his garden once, M, and I dried them. Then I ran them through the food processor, and they made amazing onion powder.

I do that too Val. I like to keep some dried minced, powder and onion salt in the cabinet. If I can do it myself, all the better!
I think I killed the dehydrator! I had the top of it running and set it on the counter for a minute to arrange the onions better and it just shut off. I'm hoping it will come back on today.

It wouldn't come on again and frankly, I don't have the time or know how to fix it. I'm going to have to scrounge the thrift stores for another one.

They used to be easy to find in thrift stores, but they're getting harder. I think it's because people are learning how to prep and snapping up used equipment, including dehydrators, canners, canning jars, and so on. A few years ago, hardly anyone knew what they were or what to do with them. I got a small Excalibur for $6! You don't see deals like that anymore.

I got 4 bags of baby carrots (the big bags) when they had them BOGO free the other day. Figured I'd can them up since I don't have room in the freezer for them. I thought it would make about 6 or 7 pints. No! I already used half of one bag, and still wound up with 12 pints. Probably could have had one more, but I ran out of lids so I gave the last little bit to the chickies. And that was doing hot pack and cramming more into the jar.

I'm fixin to can some store bought bbq sauce. I have no idea what ever possessed me to by such a gigantic container of Sweet Baby Rays sauce. I'm goin to put it in the jars and set them in the canner without the lids and the water half way up the jar. Then I'm goin to put the lid loosly on the canner and boil the water until the sauce gets hot. Then I'll put the lids on and process them. I've got another canner of chicken and broth to do. After that I'm goin to can all these pecans. Right now I have 21 qts and still another half bushel basket left to shell.

DH found another dehydrator for me at the habitat restore. Woohoo! Once we get moved in I'm thinking about trying my hand at potatoes.

The parsley in my aquaponic garden has been growing like crazy, so I picked a bunch and put it in the dehydrator. Picked some oregano, too.

I've recently dried willow bark, lemon zest, orange zest, and spinach.
If you want to dry willow bark, get the new shoots and peel them with a vegetable peeler. I've tried every way I could think of to do it and that worked the best and was the easiest. You can chop them smaller with a knife once you have it all off.

Dan brought me a huge bag of beef bones so I'm making broth to can today. I doubt I'll get it canned today, but am hoping to get the broth cooked and strained. I have the bones browning in the oven right now. It took my 3 biggest pans to hold them all. There was barely enough room left in the oven to slide in a pullman pan of vegetables. I did those separately because they don't take as long and I didn't want them to burn.
