Oatmeal Pie (Mock Pecan Pie)
pastry for one-crust 9" pie 2/3 cup sugar 1/3 cup butter or margarine, melted 1 cup corn syrup 1/2 teaspoon salt 3 large eggs 1 cup old-fashioned oatmeal
Heat oven to 375°. Line pie plate with crust.
Beat sugar, butter, corn syrup, salt and eggs in medium bowl with wire whisk or hand beater until well blended. Stir in oatmeal.
Pour into pastry-lined pie plate.
Bake 40 to 50 minutes or until center is set.
