Okay, I have this in the oven now. I love the assembly - I may use this for other fillings when I have a big crowd. Much faster & easier than a traditional crust. And I *really* liked the way the filling set up and tasted. Some of the fillings I've made lately tasted really starchy before baking (yes, I tasted them!). But this one was really good before it went in the pie. - 8 c. zucchini, peeled, sliced & seeded
- 2/3 c. lemon juice
- 1 c. sugar
- 1/4 tsp. nutmeg
- 1/2 tsp. cinnamon
- 1/2 tsp. salt
- 4 c. flour
- 2 c. sugar
- 3 sticks butter
- 1/2 tsp. salt
Bring to boil zucchini, lemon juice, sugar, nutmeg, cinnamon and salt. Boil until tender. Mix remaining ingredients. Stir 2/3 cup into zucchini mixture. Divide remaining in half. Press half into 9 x 13-inch pan, spread with filling and top with other half. Bake at 350 degrees for 40 minutes.

This was fantastic. Not what I think of as a true pie - the crust is sort of a cross between shortbread and a crumb. But delicious. this was a huge hit at church, including with the I-don't-eat-squash crowd.

Thanks for the review. Now I gotta get some squash. I want to try this with pattypans, but the poor things are still only putting out male blooms.

Do you know how crazy this is. Always I have tons of zucchini to get rid of. I cant find any anywhere. I forgot to look in walmart today. I want really bad to try this. It sounds so good.

Peggy, do you have a farmer's market near you? Ours is only open on Fridays, from 4 till 7. I haven't been there yet.

Thats where I've been looking. They have cucumbers like crazy but no zukes. Thats why its crazy. Usually they are practically giving them away.

Well, life just gets weirdier and weirdier. Went to church tonight and a lady gave me 2 bags. One with a big mess of okra and the other with YOU GUESSED IT Squash. Some yellow and some green. Boy that "ask and you shall receive" works quick.

yum. I'm telling you, I have intentionally *not* made this again, 'cause I don't need to eat it...it is not dietetic but it is so good.

Well, I'm goin to be making it today. I may have to half it. Theres only 2 green squash in there. Wonder if it could be half yellow squash. hmmm Probably I wont do that the first time.

Thanks Sandra, I was looking and one of the yellow squash is really too big for anything else so I was thinking about putting it in the pie with the zukes.

Thanks. I didnt get anything done yesterday but the pie filling. It takes me forever because I have to keep sitting down with my back. Maybe today. It sure sounds good.
