Uptown Pimento Cheese Spread
8 oz. shredded mild cheddar cheese (yellow or white)* 8 oz. cream cheese, softened 4 oz jar minced pimentos, juice and all 1 small onion, grated or pureed 4 T. mayonnaise 1 t. hot sauce (more or less to taste) 1 t. worcestershire sauce salt, if needed
Mix everything thoroughly. Taste and add salt if it needs it. Chill to thicken and blend flavors. Can be used for plain or grilled sandwiches.
*White gives a prettier mixture, but they taste the same.

What timing. I have a couple of bags of shredded cheddar/jack cheese I need to use. This stuff sounds good.

It's pretty tasty. The worcestershire gives it kind of a strange color, but adds wonderful flavor.
This is another one I saw on Diners, Drive-Ins, and Dives. The restaurant that was serving it, served it on homemade bread with country ham, then they cooked it in a panini press. I don't usually get that fancy.

I made something similar today, but gave it a Mexican flair. I put the same amount of cream cheese, cheddar cheese, mayo, and onion (about 1/3 of a medium), but added juice from pickled jalapenos, minced garlic, minced banana peppers, minced dried tomatoes, a little garlic powder, chili powder, cayenne, and a tiny bit of salt.
Dan liked both of them, but liked today's better, so that's what he's getting in his lunch tomorrow.
Peggy, for lunch today, I made a sandwich of a thin layer of the original cheese spread and a thin layer of your devilled ham spread. It was SO good! Of course, after I made mine, all the kids had to have one - or three. We used nearly a whole recipe of your devilled ham spread and about half of the cheese spread.

Peggy, remember when you first posted that recipe for the devilled ham spread on BH? I've kept a batch in the fridge almost constantly ever since. I just love it on toast! I think of you everytime I make it. Thank you for the recipe.

You are so welcome. I dont make it a lot because I'm not supposed to eat it but paul loves it so I'll make him some tomorrow for his crackers. I'm goin to have a little on my pimento sandwich. Yum
