APPLE CARROT CAKE
1 ½ CUPS GRATED APPLE 1 ½ CUPS GRATED CARROTS 4 CUPS FLOUR 3 CUPS SUGAR 4 EGGS 1 CUP NUTS (pecans or walnuts) 1 1/4 CUPS OIL 2 TSP. VANILLA 1.5 TSP. SODA 1 TSP. SALT 1 TSP. CINNAMON
Stir together the dry ingredients. Add the oil and eggs. Now blend in the grated carrots and apples along with the nuts. To this mixture you may also add raisins and coconut if you would like. Place in a greased and floured large bundt pan or angel food cake pan.
Bake in a 180/350 degree oven until tests done. About 1 hour and 15 minutes.
