I wanted a very moist, flavorful cake yesterday, so I made up this one. I was talking on the phone to my sister while I was making it and, at each step, I'd tell her what I was going to do next and she'd say, "Oh, no! That's too much!", but I did it anyway. It turned out wonderful! I will definitely be making this again - maybe today!
Super Moist Strawberry Cake
1 strawberry cake mix, prepared in a 9"x13" pan, according to package instructions and cooled (Yellow or white would be ok, too)
2 packages of strawberry jello
1 cup sugar
1/2 cup cornstarch
1 cup water
Vanilla Frosting ( grandmaw.proboards.com/index.cgi?board=sweets&action=display&thread=3388&page=1 ) OR whipped cream
Prepare 1 package of jello according to package instructions. Poke holes all over cake with handle of wooden spoon and pour jello over it.
In medium saucepan, mix other package of jello, sugar, and cornstarch. Gradually stir in water, then cook, over medium heat, until mixture comes to a boil and thickens. Pour over cake, spreading to cover evenly. Refrigerate for an hour or more (if you get busy).
Make Vanilla Frosting or whipped cream and spread over top of take. Store in refrigerator.
Makes 15 servings.
Note: I haven't done it yet, but other flavors of jello and cake would work, too. I think lemon, orange, and cherry would all be great.
BTW, when I made the cake mix, I didn't bother to drag out the mixer. Instead, I just put everything in a bowl and beat it with a whisk till it was smooth, like my sister told me to do. It turned out great! I'm not going to bother with the mixer anymore. Why make it harder than it has to be?
