1/3 to 1/2 green pepper 1/3 to 1/2 onion mushrooms 1 to 5 cloves of garlic (to taste) additional seasonings of your choice (optional) We use fresh cracked pepper appx. 5 to 6 lbs. chicken (or turkey) 1 - 16 oz. can tomato juice 1 cup water 1 heaping tablespoon sugar 1 cup jasmine, Pearl or Blue rice (plain white rice works also) 1 - 16 oz. can sweet corn (not creamed)
Chop, dice or puree pepper, onion & Garlic
Lightly coat bottom of pan with vegetable oil
Fry green pepper, onion & garlic in oil until softened
Slightly brown chicken (both sides) in mixture in pan
Add tomato juice, water & sugar (as well as all other seasonings)
Let simmer 2 1/2 to 3 hours, till chicken is falling off bones
Take chicken out, let cool & shred while still simmering mixture Return chicken to pan & add uncooked rice
Food is done when rice is completely cooked (appx. 20 - 30 minutes)
Taste to assure rice is cooked before serving
