My friend in Michigan made this when she was going to Weight Watchers. I had some at her house and had to have the recipe. I've been making it ever since.
Cabbage Soup (aka: Weight Watcher's Soup)
1 head of cabbage, shredded 1 (46 oz) can V-8 juice (3 pints of homemade tomato juice can be used instead) 1 (46 oz) can water 2 or 3 stalks of celery, chopped 3 or 4 carrots, sliced 1 onion, chopped 2 beef bouillon cubes (or 2 t. beef soup base or 2 cups strong beef broth) 1 can green beans 1 can mushrooms, optional salt and pepper, to taste
Combine all ingredients, except beans. Bring to a boil and simmer a couple of hours or so. Add beans and simmer about 10 minutes more.
Makes a lot.
