Tuna Patties
1 can tuna, drained 1 egg 1 T. grated onion 3 T. butter or margarine 1/3 cup flour milk salt pepper oats
Melt butter in small saucepan. Stir in flour and cook until bubbly. Add milk until mixture forms a ball. If it doesn't form a ball after 3 or 4 additions, add a more flour, a little at a time, until it does. Cool mixture.
Put tuna in a bowl and break it up with a fork. Add eggs, onion, salt, pepper, and flour mixture. Mix. Add enough oats to make a stiff enough mixture to form into patties. Chill about half an hour.
Form into patties, dredge with flour, and fry in hot oil until brown. Serve on buns or on a plate.
Makes 8 - 10 thin patties or 6 thicker ones.
You can make this recipe with salmon, too - just double everything, and use salmon instead of tuna. It makes way more patties.
