Carrot Cake
2 cups flour 1 cup sugar 3/4 cup brown sugar 1 t. baking powder 1 t. baking soda 1 t. salt 1 1/2 t. cinnamon 1 t. allspice 1/2 t. cloves 2/3 cup shortening 3 eggs 1 cup buttermilk or sour milk 1 cup chopped nuts* 1 cup raisins 3 large carrots, or equivalent, shredded*
Heat oven to 350°. Grease a 9"x13" pan and set aside.
Measure all ingredients, except nuts, raisins, and carrots, into mixing bowl. Mix with electric mixer on low until flour is moistened. Then raise the speed to medium-high (or just high if your mixer is handheld, like mine) and beat until light and fluffy, about a minute. Stir in nuts, raisins, and carrots. Pour mixture into pan and spread evenly. Bake for 40-50 minutes or until cake tests done.
Frost if desired. Sour cream or creme cheese frosting is good on this. Today I'm going to serve it with custard sauce.
* I pulse these in the food processor
