I know this doesn't sound like much, especially the frosting, but it's my favorite cake and the frosting makes it perfect. "Mom" is my mom.
Mom's Prune Cake
1 1/2 cups sugar 1 cup oil 3 eggs, beaten 2 cups flour 1 t. each nutmeg, cinnamon, allspice, salt, baking soda 1 cup buttermilk 1 t. vanilla 1 cup chopped nuts 1 cup cooked, chopped prunes (simmer in water until tender) Mom's Buttermilk Frosting (recipe follows)
Heat oven to 350.
Combine sugar, oil, and eggs. Mix dry ingredients and add alternately with buttermilk. Stir in vanilla. Fold in nuts and prunes.
Pour into 9"x13" greased baking pan. Bake 50 minutes.
Cool and frost with buttermilk frosting.
Mom's Buttermilk Frosting
1 cup sugar 1/2 cup buttermilk 1 stick butter or margarine 1/2 t. baking soda 1 t. Karo syrup
Cook to soft ball stage and beat until thick and of spreading consistency.
