4 T. olive oil 1 onion, thinly sliced 1 green bell pepper, cut into strips 2 tomatoes, peeled, chopped (you can use 14 oz. can diced tomatoes) 1 lb. ground beef or ground turkey pinch of paprika 1-1/4 c. long grain rice 2-1/4 c. beef stock salt and pepper
Heat the oil in a pan. Add the onion and bell pepper and cook over low heat, stirring occasionally, for 5 minutes, until softened. Add the tomato and beef and cook, breaking up the meat with a wooden spoon, for 5 minutes, until lightly browned. Add the paprika, season with salt and pepper, and mix well, then stir in the rice, and cook, stirring constantly, for 2 minutes. Pour in the stock, cover, and cook for about 15 to 18 minutes, until the rice is tender and all the liquid has been absorbed. Serve immediately.
