Chinese-style Rice contributed by carla
2-1/2 c. long-grain rice 4-5 T. peanut oil scant 1-1/2 c. diced carrots 1 large green bell pepper, diced 4 c. bean sprouts, cut into short lengths 3-1/2 oz. lean pork, diced 5 T. soy sauce salt
Cook the rice in boiling water and rinse under cold running water in a sieve. Drain well and set aside. Heat the oil in a large skillet. Add the carrot, bell pepper, and bean sprouts and stir-fry for 10 minutes. Add the pork and stir-fry for 5 minutes more, then stir in the rice. Pour in the soy sauce and season with salt, if necessary.
