Cuban Black Beans contributed by carla
1 lb. dried black beans, rinsed, soaked overnight, drained and rinsed again 4 oz. salt pork 1 small whole onion, peeled 2 T. butter 1 large onion, peeled and diced 1 t. minced garlic salt and freshly ground black pepper
Place beans in large stockpot with enough water to cover. Add pork and whole onion and heat to boiling over high heat. Reduce heat to medium and simmer 2 hours or until beans are tender, adding more water if necessary, to keep covered. Remove from heat and discard whole onion.
In large saucepan, melt butter over medium heat. Add diced onion and garlic. Cook until translucent, about 5 minutes. Add 1 cup of the cooked beans and mash until well blended. Return mashed bean mixture to stockpot. Stir to blend and season with salt and pepper to taste.

This is so good just like this with warm tortillas .... or mash it and make burritos.
