I read this on another forum and tried it. It works so well, I doubt I'll ever go back to my former ways of cooking rice. The rice comes out perfect, separate and fluffy, everytime.
Measure water for the amount of rice you want to cook (twice as much water as rice). Pour the water into a saucepan and add salt, according to package directions. Bring to a full boil. Stir in rice and cover. Bring back to a hard boil and boil 2 minutes. Turn off heat and allow to sit, still covered, for 20 minutes - it doesn't hurt it to sit longer, if you aren't ready for it yet. Fluff with a fork and serve.
I have only done this with white rice, so I don't know if it would work with brown rice or not.

My absolute favorite way to cook rice isn't always practical - but if I have something in the oven anyway, I put the water/rice (2:1 ratio) in a pan with a well-fitting lid and stick it in the oven at 350 for half an hour. It's not worth heating the whole oven, but if it's already hot, it's so easy. And it comes out very nice.
Recently, I was told you could make it in the crock pot. I tried it. Ugh, it was awful! Mushy overcooked - and I turned it off an hour earlier than told to!

I like the oven method, too. I saw it on Good Eats and posted it here... somewhere. It works nicely for brown rice, too.
I've made it in the crockpot, too. I didn't like it, either.
I've also boiled it like you would noodles, then drain it in a colander. That turns out nice, but uses a lot of dishes, a consideration if you're doing them by hand, like we do.

I usually turn it off when it comes to a boil; otherwise it boils over all over my stove.

I cheat and use a rice cooker.
edited to add: I purchased it new at the thrift store for $5. Best 5 I ever spent as we eat lots of rice.

I had a rice cooker, but it wasn't big enough for my family, so I gave it away. It made good rice, though.
