Potato Coconut candy 1/3 cup mashed potatoe's 1 1/3 cup powered sugar 2 1/2 cups coconut 1/2 tsp vanilla mix sugar into mashed potatoe's,add vanilla and coconut shape into balls and chill,dip into melted chocolate,and cool on wax paper.

That would be a good center for something similar to those candies they call haystacks (from Brach's) What kind of coating do they have? Is it butterscotch?

I'll have to dig out my recipe for Mounds. I don't remember how to make them, but I know it was really simple, just a few ingredients. You could put almonds in them and make Almond Joy, too.
