This was really good. I made it last night but changed it up a little. I'll put my changes in parentheses.
* 6 boneless skinless chicken breasts * 1 cup dry breadcrumbs or panko * 1/4-1/3 cup parmesan cheese * 1 teaspoon seasoning salt (Emeril's Essence) * 1/2-1 teaspoon ground black pepper (white pepper) * 1/2-1 teaspoon garlic powder * 1 cup prepared ranch salad dressing (Spicy Ranch dressing) * 1/4 cup melted butter (no substitutes) (2 T. butter, melted)
Preheat oven to 400F. Line a baking sheet with foil and place a rack on top.
In a shallow bowl, mix together breadcrumbs, parmesan, seasoning salt, pepper and garlic powder.
Dip the chicken into the Ranch dressing and coat both sides. ( I marinated the chicken in the dressing for an hour in the refrigerator.) Coat in the breadcrumb mixture.
Place chicken on the rack. Drizzle with melted butter.
Bake for 30 minutes.
NOTE: When I make it the next time, I will put it under the broiler for a few minutes on each side after baking. The coating was still a little soggy even though it was browned.
