The other night, I dreamed I made a jelly roll out of a yellow-cake mix with a turtle-cheesecake filling and caramel frosting. Once I was awake, I realized that a single jelly roll from a cake mix simply wasn't happening and I had no idea how many one mix would make, so I altered the assembly a little bit. It sounded far too yummy NOT to do something with! Here's the recipe I came up with...and it WAS delicious! Cake...You can make your favorite single recipe. I used a butter-recipe yellow mix that I had handy. I divided it into two 9x13 pans but I think 3 layers may be even better. Prepare according to directions and turn out on racks to cool. Caramel frosting...Again, you can use your favorite recipe...I used pre-made. Filling... 1-8 oz. package of cream cheese, softened 1/2 c. butter, softened 3/4 c. powdered sugar 2 T. brown sugar 1/4 t. vanilla extract 3/4 c. miniature semi-sweet chocolate chips 1/2 c. chopped pecans Beat together cream cheese and butter till creamy. Beat in powdered sugar a third at a time. Add brown sugar. Add vanilla extract. Beat on medium speed 4-5 minutes till somewhat fluffy. Fold in chocolate chips and pecans. Assembly... One layer of cake Spread with filling Other layer of cake Caramel frosting Sprinkle with additional pecans and chocolate chips if desired. STORE IN REFRIGERATOR!

Now I know why Ibought 4 pkg of cream cheese today when I only needed one. Exchanging toffee chips for the nasty chocolate things will make this just about perfect. I'll be making this right after the cheese cake cookies. Yummy

Peggy, you might want to make this instead of the cheesecake cookies. Belinda made them yesterday and they were kind of bland. Nobody really liked them, except for Pal, who got on the table and finished off the plate of them. We had to laugh, but he's banished from the house anyway. (He wasn't supposed to be inside in the first place)
I'd have to substitute carob chips, but it sounds delicious! I'd probably use canned frosting, instead of making my own. I like the canned caramel frosting because it stays soft.

Heres my creamy caramel frosting recipe. Yummy stuff. 6 T. milk. ( canned milk is good) 6 T. butter 1 cup brown sugar packed Put these ingredients in a pan. Heat on med heat just until the sugar is dissolved. Set it off the stove to cool for 10 min. Then put 3 1/3 cup powdered sugar in a bowl. Pour in the milk mixture and beat with electric mixer until creamy. You may have to add sugar or a tiny bit of milk to get it like you like it. This will ice a 9x13 cake. Double it for a layer cake. Its sooooo good on a chocolate cake with pecans in the frosting.
