Chicken Strawberry SaladThis is for one serving, so just multiply it as needed. It was very yumm...... chilled cooked cubed chicken breast, about 1/2 cup shredded lettuces: romaine and iceberg (the iceberg lettuce helped 'hold' the dressing) 1/4 to 1/3 c. chopped fresh parsley* Strawberry Dressing6 to 8 fresh strawberries, washed and hulled 2 T. apple cider vinegar 1 to 2 T. fresh lemon juice 1 to 2 T. vegetable oil 2 to 4 T. sugar (just to taste, I used 2 T.) Mix with an immersion (stick) blender until smooth. If you think it needs a bit of water, add some. Assemble: mix lettuce and parsley on a plate. Top with the chicken. Pour the lovely strawberry dressing over all. Can sprinkle a bit of sea salt over all if you desire....I did, and liked the contrast....but just used a little bit. The more I look at this recipe, the better it sounds. I think the kids would love it. I'm going to wait for my strawberries to ripen because they have so much more flavor than the storebought ones. That will give my parsley time to get better established before I start cutting it, too.

Since Dan brought home a flat of strawberries yesterday, and I had some leftover chicken in the fridge, I went ahead and made this tonight. It was pretty good with just the dressing, but, when I added some course salt - WOW! That really makes it! The kids thought so, too.
I'm glad I made a triple batch of the dressing. I have enough leftover to make it a couple more times.

Oh my! I just made the dressing! Can I just stick a straw in it and call it a smoothie?
How about if one of you adventurous people try canning a jar or two and see how it holds up? It would be worth buying a bunch of strawberries just to have that dressing put up for later in the year!

I'm telling ya! I will probably never eat bought salad dressing again! I'm sure frozen strawberries would work just fine, since they thaw out kind of mushy. I'll be making that dressing for a long time.
Oh yeah, the salad was good too, but I think I used a bit too much parsley. Or maybe I just didn't mix it around very good. Still, the whole thing was delicious!

I really didn't like the parsley. It wasn't terrible, but I, apparently, don't like fresh parsley. (either that or mine is stronger than normal - it's flat leafed) I left it out the second time I made it (left out the chicken, too) and it was still terrific. (yeah, I just made a lettuce salad) We had company and I served them plain salad with that strawberry dressing, along with lasagna. There wasn't much salad left.

I've read that flat leaf parsley is stronger than curly. I like it better though. That dressing is so good it just needs some kind of leaf to sit on so you can eat it.

I finally got salad to put the dressing on. It was almost gone. I'd been putting it on my baked chicken and then dippin. My granddaughter who wont touch salad took a big bite of lettuce and spoke with her mouth full. "Meemo this is just so good". Unbelievable.
