I grew up in the depression and have one of my moms cookbooks she used. Not very big, just a few pages.
Macaroni, Hardcook 6 large eggs and cool completely. Cook 8 oz of macaroni, drain very well In a heavy sauce pan, beat 2 1/2 cups of milk into 1/3 cup flour untill smooth Add 1/2 teas. salt and 1/4 teaspoon pepper Cook over low heat stirring constantly, until sauce has thickened. Remove from heat and stir in 1 Tablespoon of Mustard. Coursely chop egg whites, and stir into the sauce with one cup of peas. Serve macaroni topped with sauce and egg yolks.
Macaroni was a staple in the depression and war years, There was also another recipe we made from chopped bacon and canned tomatoe's and onions. Irene

Pauls mother made the mac/bacon/tomato/onion stuff a lot. Mama never made it with the bacon she always used ground beef. Just a little meat and a lot of macaroni. It was a good way to fill up 6 starvin kids. We still like it a lot. I've made it with ground sausage too and thats good. You know I was thinking the other day about how it seems like theres no "cheap" food anymore. But came to the conclusion that pasta and rice are still priced low enough that you can make a real inexpensive meal with them. Back then we never had meat on the table. It was always a little bit of meat in something that usually had a lot of potatoes/ pasta/rice in it. We were a lot healthier then too.

Peggy, check Dollar General for noodles. Clover Valley brand is always cheaper than the grocery store here, even when the grocery store is having a sale on them. Also, CV is a full pound, while many of the national brands aren't anymore.
