Really Moist Cornbread
1 (8.5 oz.) pkg cornbread mix 1/2 cup mayonnaise 1 egg, slightly beaten
Preheat oven to 400°. Grease an 8-inch round or square baking pan; set aside.
Combine all ingredients together until moistened. Spread into prepared pan.
Bake 25 minutes or until toothpick inserted in center comes out clean.
NOTE - For variety, add one of more of the following to the corn bread batter before baking:
1 can well-drained Mexi-corn, or 1 can of diced green chilies, or 1 chopped jalapeno pepper, or 1 cup (more or less) shredded cheese, or 1 cup (more or less) crumbled bacon
