Homesteader Cornbread
1 1/2 cups cornmeal 2 1/2 cups milk (I used powdered) 1 cup white flour 1 cup wheat flour 1 T baking powder 1 t salt 2/3 cup white sugar 2 eggs 1/2 cup oil (I used light olive oil)
Preheat oven to 400 degrees. Combine cornmeal and milk in a small bowl and let stand 5 minutes. Mix in eggs and oil. Grease a 9 X 13 pan.
Mix together flour, baking powder, salt and sugar. Pour wet ingredients into dry and combine until smooth. Pour into prepared pan.
Bake for 30 minutes or until knife comes out clean
